Resumen: | En el presente trabajo se analiza la flora fúngica de 102 muestras de cacahuete (Arachis hypogea), mediante aislamiento e identificación. Así mismo se estudia la influencia que ejerce la cáscara y los tipos de tratamiento que sufre el grano
desde su recolección hasta su venta, sobre la micoflora.
La micoflora está compuesta por los géneros Aspergillus y Penicillium
fundamentalmente, siguiéndole en importancia los Mucorales, Fusarium y Levaduras.
Parece ser que tanto las muestras con cáscara, como aquellas que han sufrido algún tipo de tratamiento término, presentan menor carga fúngica.
Se ha aislado un total de 387 cepas de Aspergillus flavus, de las cuales 79
(correspondientes al 20.4%), han presentado capacidad productora de aflatoxina en
condiciones de laboratorio. In the presente work, the fungal florae of 102 peanut samples have been analyzed afier their isolation and identification. Moreover it has been studied the influence of the pod and the type of treatment given to the grain during the period from harvesting till it gets to consumer, on the mycoflorae contents in the grain. The fungi present in the peanut sarnples belong mainly to the genera Aspergillus and Penicillium followed by the Mucorales; Fusarium and several Yeasts. It seems that the podded samples, as well as those that have received any kind of heating treatment, show the lowet fungal contents. A total of 387 strains of Aspergillus flavus have been isolated, 79 of which (corresponding to a 20.4% of the strains), had aflatoxin producing capability in laboratory conditions. |
