dc.description.abstract | La sidra como bebida histórica de una amplia zona atlántica de Europa, ha marcado el desarrollo de sus negocios de hostelería. Los cambios sociales han empujado a la hostelería sidrera a una gran evolución en el siglo XX, destaca, entre ellos, la incorporación de la cocina local en su oferta, de un modo siempre progresivo pero constante. Las denominadas Sidrerías actuales constituyen auténticos establecimientos gastronómicos, y con un poder de atracción turística superior, al ofertar un mix de bebida y de comida tradicional, diferencial y superior, al resto de la hostelería. Este trabajo, realizado en Asturias a partir de una amplia encuesta a turistas en las sidrerías de Oviedo, explica la evolución desde la figura histórica del “chigre” y, añade varios encuentros sobre el atractivo turístico de las sidrerías en términos atributos gastronómicos principales, el rol de los platos tradicionales y la satisfacción final del turista. | es |
dc.description.abstract | Cider, as the historical drink of a large Atlantic area of Europe, has marked the development of its hotel and catering businesses. The social changes have pushed the cider hotel and catering business to a great evolution in the 20th century, among them, the incorporation of the local cuisine in its offer, in a progressive but constant way. Today's cider bars are authentic gastronomic establishments, with a superior power of tourist attraction, offering a mix of drinks and traditional food, differential and superior to the rest of the hotel and catering business. This work, carried out in Asturias on the basis of a wide survey to tourists in Oviedo's cider houses, explains the evolution from the historical figure of the "chigre" and, adds several meetings on the tourist attractiveness of cider houses in terms of main gastronomic attributes, the role of traditional dishes and the final satisfaction of the tourist. | es |
